Anise, alcohol and specially treated water are the basic ingredients. They boil in the still to a vapor that is collected externally by condensation into high degree of liquid Arak. The bulk is then brought down to bottling strength which is around 100 proof. After a period of aging, the Arak is filtered and bottled, to be consumed in a unique matter of adding water until the Arak in the glass is whitened and ice is added to it to make the best tasting drink.

This 16 year old from the Isle of Jura was a bronze medal winner at the 2004 International Wine and Spirits Competition. Nose: Fragrant, slightly floral cereal, some minerality at first, becoming increasingly creamy with a hint of orange. Mixed nuts, redcurrant, green apple and finally dark chocolate and spice. Palate: Oily and resinous with sweet tobacco, mixed nuts, clove, milk chocolate and violet. Rich and round. Finish: Drying, fragrant oak. After a few sips some chocolate lingers too. Overall: The whisky of choice for the Isle of Jura's 200 or so inhabitants.

With the continued popularity of wine finished bourbon, Barton 1792 Distillery expands their portfolio with the introduction of Thomas S. Moore, a line centered on cask finished whiskeys. Of the many wine finished bourbons on the market, Cabernet Sauvignon finished bourbons are far less common. It’s a bit ironic given the dark fruit flavor profile of cabernet sauvignon wine pairs well with bourbon's typical flavor profile. That is on display with this Thomas S. Moore release, as the palate takes to the cask finish quite well.
