This limited edition wine-barrel finished whiskey smoothly combines our 6-year American Whiskey with red fruit and Asian spices of the Mauritson Winery's Rockpile Vineyard Zinfandel.

Pavito begins with a base of Maestro Dobel’s Silver tequila double distilled in copper pot stills- achieving the smoothness that Dobel tequilas are known for. After a brief period macerating the fruits and spices, a third distillation is performed - a first for the Maestro Dobel portfolio - during which the pechuga is placed at the top of the still. The tequila vapors are thus infused with the aromatics of the fruits, spices and savory turkey breast. This intensifies the tequila, creating layers of complexity in the resulting liquid.

As the newest member of La Familia, this tequila has notes of roasted sweet potato with toasted oak, a taste of caramel and vanilla layered with sweet potato, and a finish that is both smooth and warm without the burn.

Relax is the perfect name for this hazy India Pale Ale because it’s impossible not to when you’re drinking it. We use a combination of fruit-forward hops like Citra and Amarillo along with Centennial and Simcoe, to impart fruity, tropical and citrus notes, and London III yeast to give it that soft, round mouthfeel. No bitterness, no pucker. Just a smooth IPA that drinks like a breeze.

This is a rich and spicy one of a kind American whiskey.  It’s a creamy and mouthwatering whiskey full of rye bread and baking spice flavors, with a sweet nose of maple and light vanilla.  Aged in new, heavy char American oak barrels.  What is a ‘single malt rye whiskey’ and why don’t you see more of them? It’s a very difficult whiskey to make. The term ‘single malt’ means that it is a whiskey made from a single malted grain from a single distillery. Most people are familiar with the term for scotch single malts- which are made from 100% malted barley. By law, any whiskey labeled as ‘rye’ whiskey has to be made from a mashbill of at least 51% rye grains and the rest can be any combination of corn, barley, wheat, or whatever. Most people who make rye whiskey will use unmalted rye grains and mix in their own eznymes to convert starches to sugars (to make the fermentable beer mash) or pitch in some malted barley to get this process going. Since malted rye turns into a thick, sticky mess during mashing, many distillers shy away from using it in a higher proportion.  Our whiskey is painstakingly crafted the hard way: 100% rye and 100% a unique whiskey experience.

There are clear notes of earth, vanilla and slightly toasted oak, complemented by strawberry, raspberry and blackcurrant aromas.
