Basil Hayden Subtle Smoke features the same high-rye mash bill that Basil Hayden loyalists know and love, but uses secondary aging to deliver a unique, layered flavor with a refined hint of smokiness.  We begin by toasting and lightly charring the secondary barrel. This is followed by delicately igniting hickory-smoked chips at a constant feed to produce smoke, which is then pumped into the barrel, resulting in notes of soft char and light butterscotch. Fresh water, anise, coriander and fennel seeds are combined and distilled together. The product of the first distillation is then distilled again before being separated in to three parts. The middle or “heart” of the second process is extracted, blended with fresh water to lower the alcohol content and placed in a stainless steel tank for approximately 20 days. After this, the ouzo is filtered and bottled.  Serve with cold water in a small glass and add ice for the traditional Greek experience. Goes well with small bites, sharp and appetizer flavors, or meze.
