Fresh water, anise, coriander and fennel seeds are combined and distilled together. The product of the first distillation is then distilled again before being separated in to three parts. The middle or “heart” of the second process is extracted, blended with fresh water to lower the alcohol content and placed in a stainless steel tank for approximately 20 days.
