Goose Island Brewery in Chicago pioneered the process of aging beer in wine and whiskey barrels, so we jumped at the chance to experiment with their used Sofie Belgian Style Farmhouse Ale barrels. We aged our four-year-old Straight Rye Whiskey in these aromatic wine-turned beer barrels, intent on capturing the lingering notes of deep dried orange peel. The final product perfectly showcases the orange notes of Sofie and the clove and spice of our rye. Two great cities, one fantastic whiskey.
